This vegan recipe is the perfect choice to enjoy your weekend with delicious and healthy food. You will have a hard time believing how flavorful dairy-free mac and cheese can be.
INGREDIENTS
9 grams whole-grain macaroni elbows
1 broccoli, spike cut into small bites
1 ½ tablespoon avocado oil
1 small yellow chopped onion,
1 cup peeled and grated russet potato
3 cloves garlic
Half teaspoon garlic powder
Half teaspoon onion powder
Half teaspoon dry mustard powder
Half teaspoon fine sea salt, according to taste
Pinch of Frontier Co-op red pepper flakes as your taste
⅔ cup raw cashews
1 cup water, can be added more if necessary
¼ cup Frontier Co-op nutritional yeast
3 teaspoons apple cider vinegar
Instructions to cook
- Boil pasta in salted water in a large pot. Cook pasta over 7 to 10 minutes. If you are using broccoli then blend it into the pot for a few minutes. Drain & transfer the mixture to a large serving bowl.
- Meanwhile, in a medium saucepan, warm the oil over medium heat. Add the onion and a small pinch of salt and cook, stirring often, until the onion gets tender and turning transparent.
- Add the grated russet potato, salt, garlic powder, garlic, red pepper flakes, mustard powder and onion powder. Mix to combine, and cook, stirring constantly, to enhance their flavors.
- Add raw cashews and some water, and blend them to combine. Put this mixture on simmering; make sure to stirring frequently until the potatoes are completely tender. Let be cooked about 6 to 9 minutes.
- Accurately roll up the mixture into a blender. Add some the nutritional yeast and 2 to 3 teaspoons of apple cider vinegar. Keep blend the mixture until it gets completely smooth. If the mixture won’t blend easily, then add ¼ cup water, blending after each one.
